Black Beans and Rice Tacos From the Ultimate Reset

Follow the Recipe below to make the Black Beans and Rice filling for you tacos and also add ¼ cup fresh corn, 2 Tbsp. salsa, ¼ cup guacamole, and 1 6-inch corn tortilla to complete the meal!

Black Bean and Rice Ingredients

  • ¾ cup cooked brown rice
  • ½ cup canned low-sodium black beans
  • ¼ tsp. extra-virgin olive oil
  • ⅛ tsp. ground chili powder
  • 1 pinch ground cumin
  • ¼ tsp. ground coriander
  • 1 tsp. Bragg® Liquid Aminos
  • Himalayan salt (to taste)

Directions
While rice is cooking, heat beans gently in saucepan until very hot. Drain and return to pan. Add olive oil, spices, Bragg Liquid Aminos, and Himalayan salt. Stir well. Gently fold beans into cooked rice. Serves 1.

My Review: I do not like Beans, but as I went through the Ultimate Reset I vowed to try all the meals as they were intended to be eaten. I was pleasantly surprised by this meal as it was hearty, flavorful, and overall just really delicious. John and I have made these tacos several times since the Ultimate Reset. Because of all the spices the beans were very flavorful and hearty, the sweetness from the corn and added creaminess from the guacamole just completes this dish. Whether you are vegetarian, vegan, or just want to try something different this is a great recipe. Use it to save you money as a meatless meal one night this week. You won’t be sorry!
